This artisan pasta is hand-made with great care by Antonio Marella, in the heart of Puglia, the heel of Italy.
This family-oriented artisanal factory uses dough made of hard wheat (durum) that is locally grown for both their white pasta and colorful pasta. A careful selection of these ancient and heirloom grains ensure a high-quality product that is rich with proteins and flavor. The pasta is dried at a low temperature for three to four days, creating a uniquely flavored pasta that expands when cooked. Their black and white, zebra patterned, pasta uses black sepia to achieve the deep dark colour.
