Heart of Palm is the white vegetable obtained from the center of specific varieties of palm tree. It is very versatile - you can eat them raw, added to salads, or steamed or even stir-fried. 

It has a slight crunch similar to white asparagus, but its flavour is comparable to artichoke hearts.  Heart of Palm is packed with important minerals like potassium, phosphorus, copper and zinc.
